Cauliflower ‘Fried’ Rice 

This double cauliflower 'fried' rice is a veggie-packed, low-carb twist on the takeout classic, bursting with flavor in every bite.

Directions
  1. Coarsely chop cauliflower. Set aside.
  2. Combine egg and egg whites in a small bowl, beat with fork.
  3. Heat a large sauté pan over medium heat.
  4. Add sesame oil and sauté onions, scallion whites, peas, carrots and garlic . Cook until onions are translucent and soft.
  5. Add cauliflower ‘rice’. Mix and cook for 5 to 6 minutes, stirring fre-quently.
  6. Stir in eggs. Cook for 2 to 3 minutes or until eggs are done.
  7. Dress with soy sauce and top with scallion greens.
